About Carolyn W. Paddock

Carolyn Paddock cannot sit still.  From an early age, she realized that the 9-5 desk job was just not going to work for her.  She knew there was a big world out there and she needed to see it, but as any self-proclaimed traveler will tell you, the travel bug is addictive, and the more you indulge, the more you need the next fix.

After studying Art History for four years at the University of Massachusetts, Carolyn saw the desk job looming and fled. By September 1989, she was a flight attendant flying for Delta Air Lines, starting domestically and eventually working the coveted international routes.

During her 17 years flying for Delta, Carolyn (nicely) asked hundreds of thousands of people to “please remain seated,” while she jetted around the world.  Twenty-four hours in Nice?  Just long enough to pick up some fresh French butter, chocolates and of course a café crème at La Lorraine.  Thirty-six hours in London?  Enough time to stock up on beauty products at Boots and grab the most authentic curry this side of Bombay.  She also had the chance to get to know some of North America’s most charming cities, bringing home bunches of dried lavender from Pikes Market in Seattle and grab a few bottles of VQA wines from British Columbia.

After tasting the delicious cuisine from all corners of the globe, Carolyn’s passion for food was ignited. In 2002, Carolyn enrolled the professional culinary program at the Institute of Culinary Education in New York City. She completed the 610-hour course with highest honors and was awarded scholarships by Calphalon and Les Dames d’Escoffier.  She also completed a 210-hour externship at the renowned Union Square Café.  Her enthusiasm for food and wine only fueled her love of international travel.

In 2006, Carolyn retired from Delta and began flying exclusively in private aviation for several Fortune 500 companies, including SONY and HESS, looking after the CEOs and their guests.  She created bespoke travel kits for her passengers, featuring her favorite products and amenities, and utilized her culinary degree to ensure four-star meals accompanied the first-class service.

But what she loved most was helping people get the most out of their travel experience.  You don’t spend thousands of hours traveling without learning a few “tricks of the travel trade.”

In November 2009, In-Flight Insider was born and in the years following, Carolyn has been using her unique expertise to provide travelers with the latest up-scale, luxury trends and practical insider information and advice on travel preparation, health and safety, style, products, services and the best discoveries—all designed to upgrade their flying and travel experience.

Carolyn currently lives in NYC and enjoys being a go-to travel expert for national media outlets, speaking, writing, and filming travel how-to videos. In addition, Carolyn maintains her FAA crew member emergency training qualifications and continues to fly for an exclusive client on a privately owned Boeing 767-ER when her schedule permits.
